Salpicon Salad dressing
   
Ingredients  
 
small onion or shallot, finely chopped
6 cocktail gherkins, finely chopped
2 tbsp parsley, finely chopped
tsp capers, finely chopped
100ml extra-virgin olive oil
50ml red wine vinegar
1 hard boiled egg, chopped
   
Method

Mix together onion, gherkins, parsley and capers. In another bowl, mix the olive oil and red wine vinegar. Stir in the chopped vegetables and the egg. Mix well and spoon over salad leaves.
