Vietnamese Chicken Salad
   
Ingredients

1 chilli, chopped
1 clove garlic, chopped
1 tbsp sugar
1 1/2 tsp rice vinegar
1 1/2 tbsp lime juice
1 1/2 tbsp fish sauce
1 1/2 tbsp veg oil
half an onion, finely sliced
black pepper
200g white cabbage, shredded
1 medium carrot, grated
200g cooked chicken breast, shredded
fresh mint, chopped
   
A great summer dish - fresh, crunchy
and great flavours.
Method

Combine all ingredients except cabbage, carrot, chicken and mint in a bowl and leave for at least half an hour.

On a big plate, mix cabbage, carrot, chicken and mint.

Pour over the dressing and toss well.

Season if needed and sprinkle over some more mint.
