Chicken fried rice

Who doesn’t love chicken fried rice?  Making it is easy and better than any takeaway (mostly!)

Ingredients
2 cups cold cooked rice
2 cooked chicken breasts, chopped
2 eggs
1/2 cup green peas
1 clove garlic
2 cm root ginger, finely chopped
1 medium onion, diced
1 green or red pepper, diced
2 tbsp Light Soy Sauce
2 tbsp Oyster sauce
Oil for stir-frying, as needed

Beat the eggs lightly with chopsticks, add a dash of salt.Heat wok and add oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once.

Cook the other half the same way.  Cut the egg into thin strips, and save for later.

Add oil and when smoking hot stir-fry the onion on high heat for a few moments. Add  the garlic and ginger and fry for about a minute, moving everything around the pan as you cook.

Next add the pepper and fry for a minute before adding the chicken and cooking for a couple of minutes to heat through.  Add the peas before turning down the heat to medium and stir-fry the rice.

Add the soy sauce and oyster sauce, taste at this stage for your own preference.  Serve chicken fried rice with the strips of egg on top or ,chop the egg and mix through before serving.
