Feta, pomegranate and broccoli salad

Another plant based lunch to try, healthy and a good mix of food groups. This is a good base for other variations of salads

Fresh healthy summer salad packed with goodness and only 320 calories per serving, ideal for a quick lunch on a hot day

Ingredients
1 small red onion, 
Pinch Salt
50g Pomegranate Seeds 
1 tbsp  Red Wine Vinegar
50g Feta 
1 Small Cucumber
6  Lettuce Romaine Heart leaves or something similar
25 g Peas – Fresh or frozen
1 clove of Garlic
25g Morrisons – Tenderstem Broccoli
Cherry tomatoes

Method
This is quick and easy , a feta, pomegranate and broccoli salad is a great combination of flavours.  I’ve added other salad items to pack it out but these can be substitute for whatever you like.

Prepare the broccoli by trimming and washing it, place in a small pan of water and cover.  Cook the broccoli for a couple of minutes on a high heat and drain.

Finely chop the red onion and add to the bowl, add the brocolli while worm to soften both.  

Prepare the other ingredients, I tend to quarter the tomatoes, cut the cucumber into large chunks and crumble the feta.

Wash and shred the lettuce and add to the bowl with the pomegranate seeds and peas (cook the peas obviously if frozen).

The final part of this feta, pomegranate and broccoli salad is the dressing, mix the olive oil, vinegar and garlic so it emulsifies and mix through the salad.

Ready to serve, for more servings just up the quantity. Good variations would be to add fresh mint or chilli or both.
