Ingredients:
- 300-400g pork fillet, very thinly sliced
- 3 tbsp groundnut oil
- 90g unsalted peanuts, roughly chopped*
- 4 spring onions, finely sliced
- 3-4 cloves garlic, finely chopped
- 2 tsp finely chopped fresh ginger
- 1 green chilli, finley chopped
- Zest of 1 lime
- Juice of half a lime
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- Half a tsp sugar
- 1 tbsp water
- Quarter cup each mint and basil leaves, shredded
Method:
In a small bowl, mix the lime zest, juice, fish sauce, soy sauce, water and sugar. This is the sauce.
Heat a wok until smoking hot. Add the oil to the wok and stir fry the pork over a high heat for a few minutes until the pork has changed colour.
Next, add the garlic, ginger and chilli and stir fry for 1 minute before adding the spring onion and peanuts. Keep the heat high and stir fry everything for a few minutes. Add the sauce and stir fry for another couple of minutes until everything is cooked through and the sauce has reduced to a thick glaze.
Add the mint and basil and mix through. Serve immediately with steamed rice
