Ingredients:
- 1 tbsp groundnut oil
- 1 clove garlic, crushed
- 1 red chilli, chopped
- 1 bunch spring onions, chopped
- 2 stalks lemongrass, finely chopped
- 2 tsp ginger, grated
- 500g organic pork mince
- 4 bundles noodles (rice or egg noodles are fine)
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- Handful fresh coriander, chopped
- Lime wedges to serve
Method:
In a wok, heat the oil then add garlic, chilli, spring onions and ginger. Stir fry for about a minute.
Remove from pan with slotted spoon and return pan to the heat. Once the pan is very hot, add the pork mince and stir fry over a high heat until browned all over.
Meanwhile, place the noodles in a bowl and cover with boiling water, set aside for a couple of minutes until tender, then drain. Return the spring onion mixture to the pan with the softened noodles and the soy sauce. Stir thoroughly, scatter with coriander and serve immediately with lime wedges.
This dish also works well with chicken or turkey mince. Could also serve with rice.
