Ingredients:
- 2 cloves garlic,chopped,
- 2cm piece of ginger, finely chopped,
- 200g lean minced beef,
- 2 tbsp Chinese rice wine,
- 6 Chinese mushrooms, roughly chopped (if using dried, soak for 20 minutes first),
- 1 tbsp light soy sauce,
- 2 tbsp oyster sauce,
- 2 baby gem lettuces,
- fresh coriander leaves to garnish.
Method:
Heat a wok or frying pan and add a little oil. Stir fry the garlic and ginger for a few minutes before adding the beef. Continue to cook on a high heat stirring all the time until the beef is well browned.
Add the rice wine and cook for a few minutes before adding the mushrooms. Continue to stir fry and then season with the soy and oyster sauce. Simmer for 5 minutes or so then remove from the heat.
Tear the cup shaped leaves from the lettuce, wash and pat dry. Arrange on a large serving plate. Put a spoonful of the beef mixture into each lettuce cup and garnish each one with 3 coriander leaves.
