Ingredients:
- 75g Gram flour (you can use 50g gram flour and 25g self-raising flour for a lighter bhaji)
- 1 tsp Cumin seeds
- 1 Green chilli, finely chopped
- 1 tsp Ground coriander
- 1 tsp Turmeric
- 1 tsp Salt
- Half a tsp mixed spice
- 4 tbsp Water
- 1 Large onion, thinly sliced
- 1 Small potato, peeled and grated
- 5 tbsp Groundnut oil
Method:
Mix together the flour, cumin, chilli, coriander, turmeric, salt and mixed spice. Stir in the water and beat to a smooth batter.
Add the onion and potato and mix well.
Heat the oil in a large frying pan. Gently drop in spoonfuls of the mixture. Cook until golden brown, turning once. Drain on kitchen paper.
Serve with lemon wedges, yogurt and mint dip, chutneys and with the coriander sprinkled over the top.
