Tzatzaki

Ingredients:

  • 1 Large tub Greek yogurt
  • 1 Cucumber, peeled and grated
  • 4 Cloves garlic, grated
  • 2 tablespoons Olive oil
  • Salt and pepper
  • A little vinegar
  • Fresh dill, chopped

Method:

Squeeze as much liquid as you can out of the cucumber – place it in a clean cloth or tea towel, scrunch it up and squeeze. Mix with the rest of the ingredients. Garnish with olives and serve with pitta bread

Chang Mai curry paste

Ingredients:

  • 1/2 tsp salt
  • 3 dried chillies
  • 2 tblsp ginger
  • 10g lemongrass
  • 2 tblsp onion or shallot
  • 1 tsp shrimp paste
  • 1 tsp turmeric

Method:

This is pretty simple, put all the ingredients into a liquidiser or a pestle and mortar to combine them. To make it easier add a little water. This will make around 4 – 5 tablespoons of paste.
