Chinese beef with noodles is a great stir fry recipe, the cooking time is due to the need to marinade the beef, the actual cooking time is about 10 mins
2 rib eye steaks
1 heaped tsp 5 spice powder
2cm grated fresh ginger
1 red chilli, finely chopped
2 cloves garlic – crushed
Bunch of fresh coriander
4 tbsp soya sauce
6 spring onions
200g medium egg noodles
250 ml beef stock
Squeeze of runny honey
First put the meat on a board, season with salt and pepper, then rub 1 of the garlic cloves, 1/2 the red chilli, the five spice powder and the ginger onto the beef and leave to marinate for 30 mins minimum.
Next cook the noodles in hot water as per the instructions (normally a few minutes, as soon as they are ready refresh under cold water to stop them cooking and sticking together, set aside for now.
In a wok pan fry the remaining chilli and garlic for a couple of minutes, add the lemon, honey and stock and reduce a little before adding the noodles back in to reheat, check for seasoning and add a squeeze of lime, the coriander and the spring onion.
In the meantime cook the steaks over a high heat until cooked however you like them, for medium allow 4 – 5 mins per side. remove from the pan and leave to rest for a few minutes.
Slice the steaks into sections and serve on top of the the noodles.
