Greek turkey meatballs with flatbreads

This is a super healthy kebab, aka Greek turkey meatballs, served with flatbread and a hot sauce its  great main or starter

Ingredients

Meatballs
500g minced turkey
50g breadcrumbs
1 onion finely chopped
1 garlic clove, minced
3 tbsp chopped parsley
2 tsp ground cumin
1/4 tsp ground cinnamon
1 tsp dried oregano
salt and pepper to taste
1 egg, beaten
Flatbread
250g strong bread flour
5g salt
7g fast action yeast
180ml cool water

 

First make the bread as it will take a little time to prove.   Place the flour in a bowl, add the salt to one side and the yeast to the other, pour in the water and mix to a smooth dough.  Transfer to a flat surface and knead for at least 10 minutes before returning to the bowl and leaving to prove for at least an hour.

For the meatballs/kebab mix all the ingredients together in a bowl and knead the mixture until it is well combined.  Form into kebabs around skewers and place in the fridge for half an hour if you have time to form properly.  This is pretty much it from a protein point of view.

When ready to serve roll out the flat bread dough into large discs and dry fry in a large frying pan over a high heat, they will take a couple of minutes each side. For the kebabs take them out of the fridge for at least ten mins place them on a rack and place under a high heat grill turning frequently, they will take about 10-15 mins until they are golden brown all round.
