Ingredients:
- 4 salmon steaks
- 1 onion, sliced
- 1 carrot, sliced
- Bunch of fresh herbs (dill, basil, parsley, bay leaf)
- Knob of butter
- 2 tablespoons plain flour
- 50-100 ml extra virgin olive oil
Method:
Place the salmon steaks in a deep frying pan. Add the onion and carrot and cover with water. Bring to the boil and boil for 1 minute. Turn off heat and leave to stand for 15 mins.
Drain off 250ml of the fish stock and boil with the fresh herbs for 5 mins.
Remove the herbs.
Melt the butter in a small pan and stir in flour. Gradually add the stock and bring to the boil again.
Transfer to a blender and process, gradually adding the olive oil. Pour onto individual plates and serve the salmon steaks on top.
Good with pasta such as tagliatelle.
