Pork with peanuts, lime and mint

Ingredients:

  • 300-400g pork fillet, very thinly sliced
  • 3 tbsp groundnut oil
  • 90g unsalted peanuts, roughly chopped*
  • 4 spring onions, finely sliced
  • 3-4 cloves garlic, finely chopped
  • 2 tsp finely chopped fresh ginger
  • 1 green chilli, finley chopped
  • Zest of 1 lime
  • Juice of half a lime
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • Half a tsp sugar
  • 1 tbsp water
  • Quarter cup each mint and basil leaves, shredded

Method:

In a small bowl, mix the lime zest, juice, fish sauce, soy sauce, water and sugar. This is the sauce.

Heat a wok until smoking hot. Add the oil to the wok and stir fry the pork over a high heat for a few minutes until the pork has changed colour.

Next, add the garlic, ginger and chilli and stir fry for 1 minute before adding the spring onion and peanuts. Keep the heat high and stir fry everything for a few minutes. Add the sauce and stir fry for another couple of minutes until everything is cooked through and the sauce has reduced to a thick glaze.

Add the mint and basil and mix through. Serve immediately with steamed rice
