Chorizo and bean chilli with fried egg

This chorizo with bean chilli served with a fried egg is a great alternative to the usual version with mince and very easy to make.  You could make it vegetarian by using more beans and leaving out the chorizo but it won’t be as good

Ingredients
1 red pepper sliced
150g chorizo, cubed
1 clove garlic, crushed or sliced
1 tin or black eye beans (or any type apart from baked beans!)
200g chopped tomatoes
1/2 tbls olive oil
1 tsp each of ground cumin, smoked paprika and coriander
Bunch of fresh chopped coriander
1/2 tsp cayenne pepper
1/2 tsp sea salt
1/2 tsp sugar
2 eggs

First fry the chorizo in a small amount of olive oil on a medium high heat for a few minutes until golden brown; remove with a slotted spoon and remove the excess oil from the chorizo to keep things healthy.

Leave enough oil in the pan to fry the red pepper on a high heat until it begins to char, this is basic a stir fry.  When it begins to brown add the chorizo and garlic and continue to fry for a a couple of minutes before adding the tomatoes and spices, sugar and salt.

Cook with the lid off for ten minutes or so until it reduces before adding the beans to warm through.

Meanwhile fry the eggs; keep them soft in the middle.

Season to taste and serve with fresh coriander (and chips!)
