Sausages with paprika potatoes and basil


  • 6 good quality butcher’s sausages
  • 400g Charlotte potatoes, scrubbed and halved
  • 1 tsp paprika
  • 1 sprig rosemary, leaves stripped
  • 1 red chilli, sliced
  • 2 slices ciabatta, torn up2-3 tbsp olive oil
  • Handful of basil
  • Parmesan


Heat oven to 200C.

Halve sausages lengthways and put them in a large roasting tin. Add potatoes, paprika, rosemary, chilli, and ciabatta pieces. Season. Drizzle with the oil, grate over some parmesan and toss to combine.

Roast in the oven for 30-40 minutes, stirring round occasionally. It is ready when the potatoes are tender and the sausages and bread are golden. Scatter with the basil, torn, and serv
