Giant beans


  • 2 x Large tins butter beans (or 500g dried)
  • 1 x 400g Tin chopped tomatoes
  • 1 Onion, sliced
  • 2-3 Cloves garlic, chopped
  • Handful of fresh parsley, chopped
  • 2-3 Dried red chillies, left whole
  • 1 Cup olive oil
  • Salt and pepper


If using dried beans, soak overnight before boiling them as per packet instructions. If using tinned beans, rinse well before using.
Put beans in an earthenware dish. Add tomatoes, onions, garlic, parsley, chilli, olive oil and seasoning. Mix well. Cook in the oven at 180C, uncovered, for 1 hour, adding more water if necessary.
