- 1 sml Onion, grated
- 1 large Egg
- 2 tbsp Plain flour
- 1/2 tsp Salt
- 1/4 tsp Ground black pepper
- 3 large or about 800g Maris piper potatoes, peeled and coarsely grated
- Oil for shallow frying
- Soured cream and apple sauce to serve
Beat together onion, egg, flour and seasoning. Stir in the potato.
Heat 1 cm oil in a frying pan and drop about 4 tbsp of mixture in mounds in the pan. Flatten them out to about 10cm rounds and cook for 2-3 mins until crisp and golden in colour.
Turn and cook on the other side and then drain on kitchen towel and keep warm while you cook the rest of the mixture in batches.
Serve immediately with soured cream and apple sauce.
