Prawn balls with fresh lime

Ingredients:

  • 200g Chopped raw prawns
  • 1 tbsp Grated ginger
  • 2 Cloves garlic, chopped
  • 1 Red chili, chopped
  • 1 Spring onion, chopped
  • 1 Egg, beaten
  • 1 tsp Light soy
  • 1 tsp Sesame oil
  • 1 tbsp Rice wine
  • 1 tbsp Cornflour
  • Small handful fresh coriander, chopped
  • Pinch of salt
  • Fresh limes and sweet chilli sauce to serve

Method:

Mix all ingredients together.

Heat some groundnut oil in a wok – enough to shallow fry.

Spoon heaped teaspoons of the mixture directly into the oil. Fry for a few minutess on one side then turn over to brown the other side briefly. Drain on kitchen paper and serve with wedges of fresh limes and sweet chilli sauce.
