Prawn Toasts


  • 225g Raw prawns, finely chopped
  • 2 Spring onions, chopped
  • 2 tsp Dry sherry or rice wine
  • 1 tsp Grated ginger
  • 1 Egg white
  • 2 tsp Cornflour
  • Salt and white pepper
  • 8 Slices white bread, crusts removed
  • 4 tbsp Sesame seeds
  • Groundnut oil for frying


Mix together prawns, onion, sherry/rice wine, ginger, egg white, cornflour and season well.

Spread onto bread and cut each slice into 4 triangles. Spread sesame seeds on top, pressing down well.

Shallow fry, coated side first for 2-3 mins, turning once until golden.

Drain on kitchen paper before serving.
