Toss the chicken with olive oil, vegetables, seasoning and salt and pepper. Pour into a roasting tray
Roast for 40-50 mins in a high oven, shaking around occasionally. Once chicken is cooked remove it from the tray and keep warm. Put the roasting tray over a high heat on the hob.
Tip in the chickpeas and tomatoes. Simmer for a few minutes to reduce and thicken.
Serve with the chicken and garnish with the coriander
