- 3 limes
- 5 cardamom pods
- 150g caster sugar
- 2 ripe mangoes
- Small handful mint, chopped
Zest the limes and squeeze the juice.
Smash open cardamoms and remove the black seeds. Discard the husks. Bruise the seeds using a pestle and mortar. Put seeds in a small pan with the sugar and about 1 tablspoon water. Heat gently until sugar has dissolved. Leave to cool a little.
Sieve into another small pan and discard the seeds. Throw in the lime zest and juice and reheat until gently bubbling. Leave until completely cold.
Peel the mangoes, cut in half and remove the stone. Cut the flesh into very thin slices, arrange on plates and spoon over the lime syrup. Scatter with the mint.
