Spiced cod with crispy onions


4 cod fillets, 140g each

  • 200g tub Greek yoghurt
  • 1 tbsp Indian spices (any combination – see Cook’s tip))
  • 1 tbsp ginger, grated
  • Juice of 1/2 lemon
  • Salt and pepper
  • 1 tbsp groundnut oil

  • 1 small onion, finely sliced
  • Method:

    This Indian recipe is really quick and easy.

    Put the fish in a single layer in a shallow ovenproof dish. Mix together yoghurt, spices, ginger, lemon juice and season well. Pour over fish, turning to coat. Set aside for 30 mins.

    Preheat grill to high. Grill the fish in its marinade for 8-10 mins until cod is cooked through and beginning to brown.  Meanwhile, heat oil in a pan and fry the onions for 5 mins or so until golden and crisp. Drain on kitchen paper.
    Serve the fish with rice and green beans – top the fish with the fried onions.
