Tuna with fresh tomato salad

Fresh tuna should be cooked more or less in the same way as you cook a steak, I like my steak rare but I do prefer tuna cooked a little longer but it’s up to you.  This is served with a simple tomato salad which makes this delicious and healthy

Ingredients:

2 Tuna steaks
6 Fresh good quality baby tomatoes
Half a cucumber
2 Handfuls of rocket or 2 little gem lettuce
4 Spring onions
1 Lemon
Red wine vinegar
Olive oil

Method:

This is a simple recipe. Heat a large frying pan and add a good glug of olive oil to the tuna because the oil is less likely to burn and spit in the pan if you do it this way, next season the tuna and add to the pan.

In the meantime prepare the salad by chipping the spring onions, tomato and cucumber, when cutting the cucumber remove the skin and the inner core which is very watery.

The steaks will need to be cooked depending on how you like them, just like a steak. Depending on thickness around 4-6 mins each side should cook them to medium, squeezing a little lemon juice over at the end to add flavour.

Leave the tuna to rest for a few minutes while you assemble the plate

Add your salad leaves to the vegetables and dress with a tablespoon of red wine vinegar, a good glug of olive oil and the juice of half a lemon.

Combine and plate up, placing the tuna on top.
