This is a great Indian recipe using chicken and which takes no time at all if you can have the onion and tomato chutney made ahead of time, its just a case of grilling some chicken.

Ingredients
2 chicken breasts, cubed
2 onions, sliced
2 cloves of garlic, crushed or chopped
1 inch fresh ginger, chopped
1 tsp salt, nigella seeds, dried chilli, ground cumin and coriander, turmeric and garam masala
1 inch cinnamon bark
1 tbsp tomato puree
2 tbsp of sugar and white wine vinegar
1 400g tinned tomatoes or about 250g fresh chopped tomatoes
To make the chutney add 2 tablespoons of vegetable oil to a small pan and fry off nigella seeds, mustards seeds, ginger, garlic and cinnamon for a few minutes on a low heat. Add the onion and continue to fry for around five minutes until they are soft before adding the cumin, coriander, turmeric, tomato puree and dried chilli before adding the sugar and vinegar.
Add the tomatoes, salt and 100ml of water and cook on a low heat for 40 mins or until reduced to a thick sauce. At the end check for seasoning and add some garam masala. This will keep in the fridge for at least a month and can be eaten with lots of Indian dishes.
To make the chicken simply coat the meat with some of the chutney and grill for about 20 mins until cooked. serve the chicken with home made flat bread, yogurt, spinach and chutney.
