Chicken and mango salad

Chicken and mango are a perfect combination for a fresh, healthy and summery salad


Cooking time
30 mins

1 chicken breast
1 tsp olive oil
zest ½ lime and 2 tsp juice
1 Little Gem lettuce, leaves separated or handful of rocket
1 ripe mango, peeled and sliced
1/2 carrot diced
Red or orange pepper chopped
½ red onion, finely sliced

First season the chicken with salt and black pepper; put in a bottom  frying pan in a little oil and fry over a medium high heat turning frequently until cooked through.  This will take around 15 mins

Take the chicken from the pan and leave to rest and cool while you prep the rest of the dish.

Get a large bowl and add the chopped carrot, pepper, onion and mango.  In a bowl, combine the lime zest and juice to make a tangy dressing

To serve slice the chicken  and mix through the salad before drizzling with the dressing.   To make this into a main double the ingredients.
